Celebrating our 23rd Anniversary with some Italian Wedding soup

Over the years our Anniversary has fallen on various work days, vacation trips, or a regular Sunday. This year we were in quarantine, and I needed to find a way to make it special. I only had a pack of ground chicken, so off I went to the kitchen to get creative.

It was a chilly day, and the thought of a warm soup with a grilled sandwich came to mind. What better soup to make~ Italian Wedding. The packet of Italian Wedding soup bread crumb seasoning added to 1 pound of ground chicken was a great compliment along with 1 egg and 1 T of Parmesan cheese. I rolled (size of a quarter) meatballs and baked them in the oven until golden. Off to get my soup started. I added the broth and soup packet, 1 additional zucchini and allowed it to cook for 30 minutes. After tasting and approving of the consistency, I added my chicken meatballs and simmered for 5 more minutes. I couldn’t wait to grill up some warm garlic Parmesan bread and eat a bowl with my hubby.
